Cauliflower soup

This recipe is one of my favorites to make on chilly afternoons. it’s so simple, but the flavors are so comforting and warm. I love the way the creamy potatoes and cauliflower come together in this silky, herby soup. It’s perfect for when you need a hug in a bowl! Here’s how to make it:

Ingredients

  • 2 Floury potatoes
  • 1 Brown onion
  • 1 tbsp Oil
  • 6 dl Water
  • 3 tsp Salt
  • 1 (450g) Cauliflower
  • 2 dl Pepper cream
  • 1/2 tsp Dried thyme
  • 1/2 dl Fresh basil

Instructions

  1. Peel and dice the potatoes. Chop the onion. Chop the basil. Sauté the potatoes and onion in fat. Add the water and salt. Cook for about 10 minutes.
  2. Add the cauliflower and cook for another 5 minutes, until the vegetables are tender.
  3. Puree with an immersion blender and pour in the cooking cream. Season with thyme and basil. Optionally serve with fresh rye bread.
