Cauliflower soup
This recipe is one of my favorites to make on chilly afternoons. it’s so simple, but the flavors are so comforting and warm. I love the way the creamy potatoes and cauliflower come together in this silky, herby soup. It’s perfect for when you need a hug in a bowl! Here’s how to make it:
Ingredients
- 2 Floury potatoes
- 1 Brown onion
- 1 tbsp Oil
- 6 dl Water
- 3 tsp Salt
- 1 (450g) Cauliflower
- 2 dl Pepper cream
- 1/2 tsp Dried thyme
- 1/2 dl Fresh basil
Instructions
- Peel and dice the potatoes. Chop the onion. Chop the basil. Sauté the potatoes and onion in fat. Add the water and salt. Cook for about 10 minutes.
- Add the cauliflower and cook for another 5 minutes, until the vegetables are tender.
- Puree with an immersion blender and pour in the cooking cream. Season with thyme and basil. Optionally serve with fresh rye bread.
